Ecology is the study of the oii<os: the neigh-borhood, the dwelling place, the habitat. Spe-cifically it is the study of the interrelations betweenorganisms and their environment. By its very nature all ecology is complex, but hu-man ecology is especially complex, because of thecomplex nature of man. Not only must man adaptto the food he eats, the air he breathes, and thebacteria and pollens he encounters, but he must alsoadapt to his family, his community, his job, and tomany other facets of his society, the people in it, andthe rapidly changing technology he has created. Furthermore, some ofour chemicals have been eaten by fish or animals,which people in turn have consumed, and the chem-icals have found their way into human systems. • As we have developed electric dishwashers so wecould get the housewife out of the kitchen, we havefound that we needed new detergents to make themwork well. Unfortunately, some of these new deter-gents were immune to the bacterial action that de-stroys soap. They passed through our septic systemsand our sewage disposal plants. Pierre Hermé – Christmas 2007 macarons

I had the best Christmas macarons before taking the picture! The fig foie gras ones, which you can see here:…

The new 8 euros apiece macarons are not worth it! They are not bad, unlike the horrible white truffle one, but they are not the best macarons ever; they are average Pierre Hermé macarons. I could feel a little vinegar, but I can drink far cheaper and far better organic vinegar in my kitchen; and the black truffle flavor was rather good, but then what?
And the chocolate foie gras macaron is good but at the same time on the verge of being disgusting.
So my advice is to stick to regular macarons, like the coffee one: simple but exceptional!
But let us not blame Pierre Hermé: we love him also because he explores new paths in our palates, even if each one of us does not love every adventure he offers!
